Grapes.

If the
Sugar is between 18 to 20 bricks, you get greenish golden colour Raisins. |

It is
necessary to remove water from the Grapes to convert them into Raisins. Priyal
Dipping Oil to accelerate this process.

Dipping Oil helps to chemically restructuring of wax coating on the skin
of the Berries and thus water from the Berries evaporates at a faster
rate, resulting in giving good quality Raisins.
Process:
2.4 kg of Potassium Carbonate should be dissolved in 100 litres of water
stirred till it dissolved properly. Then add 1.5 to 2.0 of Priyal
Dipping Oil to it. The new solution will be milky in appearance and
ready for use. Check the pH of the solution. It should 10 to 11.
Generally 1.5 lit. Dipping Oil is sufficient in 100 litres of water but in the following situation it is advisable to increase the quantity of Dipping Oil upto 2 lit.
If the pH is less than 10, ad little quantity of Potassium Carbonate to bring the pH to 10 to 11. Dip the grapes in this solution for about 3 Minutes and move the container upwards and downwards 2 or 3 times, so that the each berry is covered with solution completely. Then spread them on the racks for drying. On the 4th day the same but new solution should be sprayed on the
Grapes, which are drying on the racks. Generally 100-litres of solution is sufficient for dipping 900 to 100 Kgs. of grapes. During the drying period, if the weather suddenly becomes cloudy or rain comes, the grapes should be sprayed with the same but with new solution.
Ideal climate to dry the Grapes is when the humidity is above 55% then the drying process will reverse and water instead of going out to the berries, will be absorbed in the berries resulting in the darker colour of raisins.
To avoid this the final product must be neatly preserved in cold storage. |
